Pecan-Ginger Chicken

Makes 4 servings

Ingredients

  • 2 tbsp chopped pecans
  • 2 tsp grated ginger
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • 4 skinned and boned chicken breasts (about 5 oz each)
  • 8 strips of green onion, for garnish

Directions:

  1. Combine pecans, ginger, honey, soy sauce, and olive oil in a small bowl and stir well. Set aside.
  2. Place chicken breasts between two sheets of heavy-duty plastic wrap and flatten to about 1/4-inch thickness using a meat mallet.
  3. Place the chicken over medium-hot coals on the grill. Baste with the pecan-ginger-honey sauce and cook until the juices run clear, about 5 minutes per side, continuing to baste with the sauce.
  4. Garnish with green onion strips and serve immediately.
