Ingredients

  • 2 tablespoon chopped pecans
  • 2 teaspoon grated ginger
  • 2 tablespoon honey
  • 2 tablespoon soy sauce
  • 2 tablespoon olive oil
  • 4 skinned and boned chicken breasts (each about 5oz)
  • 8 strips of green onion for garnish

Directions

Makes 4 servings

Combine the pecans, ginger, honey, soy sauce and olive oil in a small bowl and stir well. Set aside.

Place the chicken breasts between two sheets of heavy-duty plastic wrap and flatten to about 1/4-inch thickness using a meat mallet. Place the chicken over medium-hot coals on the grill. Baste with the soy sauce mixture and cook until the juices run clear, about 5 minutes on each side and continue basting with the sauce.
