• 8 ounce cream cheese, softened
  • 1  cup margarine
  • 2 cup all-purpose flour
  • 3 eggs, well beaten
  • 2 cup brown sugar
  • 4 cup chopped pecans
  • 1 teaspoon vanilla extract


For the pastry:
Preheat the oven to 350 degrees.
Combine the cream cheese, margarine and flour in a mixing bowl and blend together. Divide into 6 equal portions, then divide each portion into 8. Press the dough into tart tins or small muffin tins.

For the filling:
Combine the eggs, brown sugar, pecans and vanilla in a mixing bowl and mix well. Pour into the lined tart tins, fill only 3/4 full. Bake until lightly browned, about 20 minutes.

Remove from the oven and cool a bit before removing them from the tins. After they are baked and cooled, they can be frozen in an airtight container.
